Here is the recipe I spoke of a while back. It is delicious and relatively easy to make. Enjoy!
1 jar spaghetti sauce
1 tsp. Italian seasoning
1 tsp. crushed red pepper
3 cups shredded cooked chicken
2 cups Shredded Mozzarella Cheese, divided
1/2 cup Grated Parmesan Cheese
2 eggs, beaten
12 rinsed cooked lasagna noodles
HEAT oven to 375ºF.
MIX first 3 ingredients; combine 1/2 cup of the sauce you just made with chicken, 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup of that sauce onto each noodle; roll up.
POUR 1/2 cup of the remaining sauce into 13x9-inch baking dish; top with lasagna rolls, seam-sides down. Cover with remaining sauce and mozzarella.
BAKE 25 min. or until heated through.
*Disclaimer*
The first time I made these, I had lasagna noodles (from Trader Joes) that were shorter and able to lay down in a pot to boil and soften. It was not a problem to roll them up.
Tonight, I just made these but my noodles (Meijer brand) are about 12", making them too long to lay flat in my pot so I had to break them in half. Of course, then they were too short to roll. I ended up just layering them like a normal lasagna. Either way, they taste the same.

M a d e l y n
Madelyn has been so busy with her coloring lately. She will sit at the kitchen table for hours (no joke) just coloring page after page in her princess coloring books. It amazes me the attention she gives to her coloring without being distracted by the things going on around her. I work with some very distract-able kids at school so this is probably why it amazes me:) She is also writing her name now and I am pretty proud. She had trouble with the Y at first but she has it down now. Check out her handwriting!
Halloween = No School for me!
I love having a 3 day weekend, especially when it's a Monday off. The weekends are so busy and it's nice to have a day to relax:) Life has been SO good lately!! Busy but good. I can hardly contain all my excitement this time of year with the holidays fast approaching!
Tonight, we might head to a trunk-or-treat but that's a big maybe. It's so hard because Alyssa goes to bed so early. (like 6:30 early) Otherwise, we will stick to our neighborhood like we did last year. It takes a while to get all the way around because the houses here are far apart so I'll take Alyssa to a couple houses and bring her back while Robert does the loop with Madelyn. I remember it took us almost 2 hours last year and I was walking it at almost 9 months pregnant. Oh the memories...
Last weekend we visited the local pumpkin patch. I had the girls all bundled up because it was cold earlier that day when we were out for ballet. I quickly discovered it was not so cold once we got there and everyone else was not dressed in layers. I guess that was a pleasant surprise upon arrival. Madelyn enjoyed the bounce house and pony ride. The girls played in the pumpkins while trying to catch some pictures. Alyssa enjoyed putting every piece of hay, leaf, dirt etc. in her mouth. And last but certainly not least, we enjoyed donuts and cider.
We also did some baking last weekend, just my big girl and I. We made Halloween cupcakes and Madelyn really likes all the different sprinkles. She was grinning from ear to ear when we took some over to the neighbor girl Erin and then to Isaac and Shae.

Alyssa- almost a year old!
I can't believe this little girl is nearing her first birthday. wow. It seems like just yesterday she was a screaming little colicky babe and yet sometimes its difficult to make that connection with who she is today. She warms my heart with her cute toofers and even bigger smile! She's been a mover and a groover from day one and not much has changed. She can't stand to get her diaper or clothes changed because that would mean she'd have to sit still for more than a half a second. She crawls around every chance she gets and loves to cruise the furniture, toys etc. As of this past week she loves to carry around Madelyn's baby dolls. I think she knows their pretty special since her big sis always has one in tote. Of course, then we go through the whole fit from Madelyn about how those are her babies and she doesn't want Alyssa eating them:) I am thinking Santa might bring Alyssa her very own baby this Christmas.
Alyssa's been crawling around for a couple of months at least but just last week she started flocking to the stairs. We are only home in the evenings so I've just kept a close eye on her and kept her away from the stairs. Well after a couple of nights, I had given her a bath and brought her down to play while I got her bottle ready. Being the pig that I am, I took a couple extra minutes to stuff my face with a piece of pizza for dinner. As I was sitting there I heard a loud BANG and it did not sound good. My heart skipped a beat as I hear her let out a loud cry. I run into the living room frantically looking around and yelling "Where is she?!?!?!?" (it seemed like forever) Then I remembered--the stairs. UGGGH She was lying at the bottom of the stairs, lifting her face off the wood floor (eek!) and bawling her eyes out. I felt horrible. I had completely forgotten about her new ability to climb the stairs. It was awful, awful, awful. Since it was bedtime, I took her upstairs to her room and rocked her with the bottle as usual. She had missed her nap that afternoon so she was very tired. She fell asleep and then I brought her down to sleep on my lap for a couple of hours. I woke her up a few times before going to bed myself that night. I know accidents happen but it doesn't make it any easier when your baby is hurt.:(
Needless, to say we now have a gate at the stairs!

Seriously?
Well on top of the laptop taking a dive the other day, now the desktop decided to do the same...are you kidding me?!?! Talk about bad luck! So as I have my grad class to stay on top of and my husband with his, I am having to stay after school or use my planning time during the day for this. Robert was able to replace the hard drive on the desktop so that's good.
Oh and to top off this whole computer crash thing....I go to start the coffee Tuesday morning only to have THAT die also!! It won't turn on or even recognize that it is plugged in. It's not the outlet, already checked that. SO now I have to get a new coffee maker too! remember that list I spoke of?? yeah, well that's been added to that list! uggh.
Can someone please send me a couple thousand dollars for that list? Please and thank you:)

It's always something...
I swear there is always something that goes bad or quits working or is in need of repair/replacement around here. The list if never ending. This week it's our laptop that decided to quit on us. Smack dab in the middle of my grad work and Robert's PE review course. I always do my work on the laptop while he works on the desktop. Now, my husband is this super geeky computer know-it-all kind of guy so he's already evaluated the situation and announced the laptop's resignation. We are not replacing it...not now anyway. (I need new tires pronto!) So this means limited computer time and when I do get it, I will have school crap to do. blah.
I want to keep blogging though! (at least once a week) That is my goal:)

Case of the Mondays
I really do not like Monday's at all. I love Sunday evenings but as soon as Monday morning comes, it's so depressing. Glad Monday is over and it's one day closer to the lovely weekend! This post is going to be random because for some reason I am feeling motivated to blog. It's been a long time. It's probably because I am not wasting away on facebook all evening long. Thank God! okay bullet style random thoughts...
~Tomorrow is my night to work on master's work. I have weekly posts on discussion boards that I have to make and I always deem Tuesday as my night for that.
~I've been enjoying Dancing with the Stars this season. I like watching Kristen Cavallari dance. Don't care for her as a person but she can dance!
~I made a REALLY good dish tonight and I will share the recipe. It's called Spicey chicken lasagna roll-ups. So delicious!
~ I am in the midst of planning a Spring Break trip for us this year and I am pretty excited about it:) It's been a couple of years since we did Spring Break...or heck- a vacation of any sort! It's about time my husband give up and let me take the reigns on this one!!:)
~ Back to the weekend...I am excited for an away UM football game this Saturday. This means I will have my husband home for the first Saturday in 3 weeks! (or is it 4?) What ever will we do?!
~ I'm really, really enjoying my students this year. Maybe it's the fact that it's my 4th year at the same school and 6th year teaching (holy smokes! where did the time go?) but I feel like I've just got it together and really have a grasp on what I'm doing. Of course, I always have lots to learn but I just feel competent in what I do. It's a good feeling.
~I really wish I would get to bed sooner than 11 o'clock each night. I'm just exhausted in the morning, yet I continue to stay up later than I should.
With that said, I better just go to bed now. It's not even 10 and I have the kitchen cleaned, laundry folded and put away, house picked up, bags packed for the morning....I have no excuse to stay up.

Princess Bike
My big girl got her first real bike this past summer. Although, it doesn't really have princesses on the bike, she insists that it's called her "Princess Bike" so that's what we call it. Her helmet has the Disney princesses on it so may that's why she insists on calling it that. I am amazed how well she can ride it now, compared to when she first got it in June. It's so much fun watching her grow and discover new things she can do.
Pumpkins galore!
Check this out...
One would think that by this picture, we must have grown pumpkins this year. Nope:) Apparently though, if you throw out 3 pumpkins and decide to throw them into your garden/compost in late fall, you will get pumpkins the following year! Not just a few either, 21 to be exact. A few of them rotted a bit and we still had 3 more ripening after Robert had picked these.
I think we will be growing our own pumpkins again next year!

First day of Ballet
Madelyn started ballet four weeks ago and she just adores everything about it. She is always dancing around the house and making us announce "Ladies and Gentleman boys and girls- The Madelyn (sometimes we have to insert Morgan here instead) princess ballerina..." She is so darn cute! She can always be found wearing her princess dresses or a ballet tutu when we are at home. Anyway, she did a great job at ballet and continues to get better at following her teachers directions as the weeks go on. We look forward to this class every Saturday morning:)
