Spicy Chicken Lasagna Roll-Ups- DELICIOUS!

Here is the recipe I spoke of a while back. It is delicious and relatively easy to make. Enjoy!

1 jar spaghetti sauce
1 tsp. Italian seasoning
1 tsp. crushed red pepper
3 cups shredded cooked chicken
2 cups Shredded Mozzarella Cheese, divided
1/2 cup Grated Parmesan Cheese
2 eggs, beaten
12 rinsed cooked lasagna noodles


HEAT oven to 375ºF.

MIX first 3 ingredients; combine 1/2 cup of the sauce you just made with chicken, 1 cup mozzarella, Parmesan and eggs. Spread 1/4 cup of that sauce onto each noodle; roll up.

POUR 1/2 cup of the remaining sauce into 13x9-inch baking dish; top with lasagna rolls, seam-sides down. Cover with remaining sauce and mozzarella.

BAKE 25 min. or until heated through.

*Disclaimer*

The first time I made these, I had lasagna noodles (from Trader Joes) that were shorter and able to lay down in a pot to boil and soften. It was not a problem to roll them up.
Tonight, I just made these but my noodles (Meijer brand) are about 12", making them too long to lay flat in my pot so I had to break them in half. Of course, then they were too short to roll. I ended up just layering them like a normal lasagna. Either way, they taste the same.
